Today I’m sharing on of my favorite family recipes, my grandma’s cucumber salad. I honestly don’t know where this recipe comes from because I’ve only ever seen it or had it at my grandma’s house. So if you know anything about it, leave a comment!

Clearly, this isn’t really a salad, I mean there’s only one vegetable and some sauce.
Anyways, I had to break out our family cookbook to find this recipe. Yeah, we have a family cookbook. My mom and aunt got everyone’s family recipes, tested them out, took pictures and put them together in a big book. Over half the book is desserts, another big chunk of it falls into either breakfast, sides (mostly pastas and cheesy corn), or “mains and meats”, leaving the salad section to a measly 7 pages. Only 2 of the salads are actual salads with lettuce, the rest are taco salad, broccoli salad (which is mostly mayo and bacon but so good), and other non-salad salads. I laugh a little every time I look through it. But it’s a great book with great recipes.

This is really simple to make, it’s just sliced cucumbers, salted, drained and then you throw a sugar/vinegar/cream dressing on top. But it’s so good. I included this recipe in my Perfect BBQ Menu because it cools everything down. It’s similar to coleslaw, but with cucumbers. This would also be a great side to a Nashville Hot Chicken Sandwich or any grilled, bbq’d meat.

Substitutions and Add On’s
- Heavy Cream can be substituted with whole or 2% milk.
- You can also add: Sliced shallots, carrots, dill, or parsley.

Recipe
Ingredients
- 3 Large Cucumbers, peeled and thinly sliced
- 1 Tbsp Kosher Salt
- 3 Tbsp Granulated Sugar
- 3 Tbsp White Vinegar
- 1 1/2 C Heavy Cream, or just enough to cover the cucumbers
- Pepper to taste
Directions
- Place sliced cucumbers in a medium bowl and mix with salt. Cover and refrigerate for at least one hour.
- Drain any liquid in the bowl.
- Combine sugar, vinegar and heavy cream, pour over the cucumbers.
- Add pepper to taste.
