Welcome back to QCK!
Happy Friday! I have been completely unmotivated to cook or write all week, honestly I haven’t even been hungry at all. Just tired. So I spent some time listening to my body instead of pushing it and it worked! I’m feeling better. So I’m back today with a new recipe for one of my favorite refreshing summer evening cocktails, a blackberry moscow mule.

These are so incredibly simple to make, especially if you want to make a big batch for a crowd. All you do is muddle some blackberries and ice, add a big squeeze of lime, a splash of vodka, and stir in your favorite ginger beer. The blackberry sweetens the drink up, but I especially love that they create little flavor pods when they’re muddled. Little pieces of juicy blackberry that are just the right size to get sucked up through a (reusable) straw and burst in your mouth. So fun and refreshing. A big squeeze of lime brings the ginger and blackberry together and you end up with a perfectly balanced flavor bomb of a drink. But don’t worry, it’s not too super sweet.

To Make A Big Batch
Like I mentioned earlier this is a really simple big batch recipe. Start by multiplying the recipe by the number of drinks you plan to serve. Then add that many blackberries to your pitcher and squeeze in your lime juice. Muddle that together and add your vodka. If you’ll be serving right away, go ahead and add the ginger beer and ice now. If you’re making this ahead of time, wait to add both until you’re ready to serve so it doesn’t go flat. If you’re guests will be drinking this throughout the night, a great idea is to just serve the muddled fruit and vodka with individual bottles of ginger beer and a big bowl of ice so guests can make their own and have a fresh drink all night long and you don’t have to play bartender.
