It’s an unexpectedly rainy morning in Minneapolis and I’m loving it. I love summer, but I’m really, really ready for fall weather, scary movies, and the excuse to eat anything and everything pumpkin flavored. But anyways, last night I was craving something sweet but was absolutely not in the mood to bake something, so I turned to a childhood favorite from my family cookbook, no bake cookies. I think everyone has their own recipe for these, but I’m going to share mine because someone requested no bake cookie recipes a couple weeks back.
These are so simple but dangerously addicting, but the best part is that you probably have everything to make these on hand. Milk, butter, sugar, cocoa powder, peanut butter, oats, and vanilla. They’re the perfect last minute, late night treat that you can whip up in ten minutes. Don’t feel like waiting for them to cool? No problem, I’d be lying if I said I never just spooned some of the warm cookie “batter” into a bowl and ate it with a spoon. It’s the best way.
A Note On Non-Dairy Alternatives
If you’re not a dairy person, you’re in luck! These are extremely forgiving. Non-dairy alternatives work just fine, however I would urge you to add an extra tablespoon of whatever your butter substitute is because non-dairy tends to leave these cookies on the dry side. Oat milk yields the best results in my opinion, almond milk leaves the cookies dry and crumbly.
You can of course always use other nut butters and gluten free oats if you prefer.
|Cook: 7 Min||Cool: 10 Min||Category: Cookies||Yield: 8-10 Cookies|
- 1/2 C (1 Stick) Unsalted Butter
- 1/2 C Milk (2% is ideal)
- 2 C Granulated Sugar
- 3 Tbsp Cocoa Powder
- 1/8 tsp Kosher Salt
- 1/2 C Peanut butter
- 3 C Rolled Oats
- 1 tsp Vanilla Extract
- In a medium pot, stir together butter, milk, sugar, cocoa powder and salt until butter is melted.
- Boil for 1 minute, then remove from heat.
- Stir in peanut butter until fully melted.
- Stir in vanilla and oats.
- Using a cookie scoop, drop scoops of batter onto a wax-paper lined sheet tray.
- Cool at least 5 minutes (if you want to just enjoy it warm with a spoon) or 10-20 minutes to enjoy as cookies.
