Not Your Grandma’s Broccoli Salad

If you’ve watched my Instagram stories lately, you may have noticed that I’ve been talking about the Rave Apple a lot, if you haven’t, let me tell you about it! The Rave Apple is a new bread of apple from Stemilt Growers in Washington. It’s a cross between a Monarch and Honey Crisp apple so you get a really crisp, juicy bite. They’re fairly tart, but not great for cooking or baking (because of how quickly they break down) but they are great with nut butters, or in salads that have a sweeter vinaigrette. Which brings us to todays recipe.

But first, one more thing about the Rave Apple, they’re on a quest to become the first verified fruit on Instagram. Why? Well, because they want to use their apples to spread positivity, something we could all use a little extra of right now. It works by followers (like you and your friends) submitting “Raves”, positive stories, experiences, and moments (jokes and puns also accepted) to the Rave Apples page. You can do this by either sending your Rave via DM or by posting it on your feed or story using #PassTheRave. You story will then be featured on the Rave Apples Instagram feed along with Raves from others all over the world. So by following, you get a chance to not only spread positivity, but recieve it as well! Imagine scrolling through instagram and seeing little bursts of positivity all throughout your feed. Sounds pretty great, right?

Okay, I don’t know if anyone else’s family makes this salad, but I’ve never had it outside of my grandmas house. Every holiday or family get together, my grandma would make broccoli salad: cold, uncooked broccoli tossed with bacon and dressed with mayo, sugar and vinegar. When I put it like that it sounds unappetizing… but I remember loving it as a kid. When I got this box of apples I thought how perfectly they would work with this salad and from there I did some updating.

The dressing stays the same, except I used apple cider vinegar. The difference here is that bacon is swapped for crispy prosciutto. The broccoli gets sautéed in the rendered fat along with some diced onions and then tossed with tart Crave Apples and a mix of almonds, sunflower seeds, pepitas, , dried cranberries and golden raisins. All of this creates a really flavorful salad or side dish with a nice mix of soft, crunchy, salty, sweet, savory and a little bit of a tart bite here and there.


  • Broccoli, you can leave it uncooked if you prefer, I like mine cooked slightly.
  • Prosciutto can be substituted with bacon.
  • Dried cranberries and golden raisins can be substituted for really any dried fruit you like, or omitted. Dried cherries would be a great addition.
  • Sunflower Seeds, Almonds and Pepitas you can use all or none. I used all along with the cranberries and golden raisins because all the different textures are really nice. Instead of buying them all seperate I just picked up a pack of trail mix from the grocery store.
  • Crave Apples in my opnion are the best choice for this salad because of their texture and tartness, but if you don’t have access to the apples, honeycrisp is a great alternative.

  • 4 Slices of Prosciutto, diced
  • 1 Tbsp Unslated Butter
  • 1 Small Yellow Onion, Diced
  • 1 lb Broccoli, cut into florets
  • 1/2 tsp Kosher Salt
  • 1/4 C Mayonaise
  • 2 Tbsp Granulated Sugar
  • 1 tsp Apple Cider Vinegar
  • 1 Crave Apple, cut into matchsticks
  • Almonds, Pepitas, Sunflower Seeds, Golden Raisins, and Dried Cranberries, for serving. See note above for buying tips.


  1. In a medium sauté pan over medium-high heat, cook prosciutto in butter until crispy, 3-4 minutes.
  2. Remove prosciutto but leave the rendered fat.
  3. In the same pan, sauté yellow onion and broccoli until fragrant. Add a splash of water and cover to steam until broccoli is bright green, 3-5 minutes.
  4. Using a tongs, remove the broccoli from the pan, discard any excess liquid.
  5. In a small bowl, combine mayo, sugar and vinegar.
  6. In a large bowl, toss the broccoli in the mayo dressing.
  7. Top with crispy prosciutto, apple matchsticks, almonds, pepitas, sunflower seeds, golden raisins and dried cranberries.
  8. Serve warm or chilled.
