Welcome back to QCK!
This week has been full of fresh, garden vegetable recipes. Last weekend, Arlo and I were able to make it to the Minneapolis Farmer’s Market for the first time this summer and we had so much fun picking out fresh produce and getting flowers. It wasn’t the same as it normally is, social distancing, masks, no hanging out with friends for a coffee. But it was still nice to get out and support local growers.

We came home with lots of cherry tomatoes, cucumbers, and some sprouts and made these massive sandwiches out of everything. They were so good that I remade them and wanted to share the recipe.
There’s nothing crazy special about these sandwiches, but the beauty is that everything is homegrown and delicious. If you don’t have access to homegrown/ market vegetables, it’s still a great veggie packed sandwich that requires pretty much no effort.
It tastes like biting into a garden with refreshing cucumber, sweet cherry tomatoes, crunchy peas in the pod, sprouts and a shmear of southwest seasoned avocado mash.

Substitutions and Add Ons
- Ciabatta can be substituted for sour dough, whole grain, seven grain, etc. Just something with a nice crust and soft inside.
- Avocado can be substituted for mayo.
- Alfalfa Sprouts can be substituted for any micro greens you like, mixed greens, or romaine.
- Tomato can be substituted with bell pepper
- You can also add cheese, mayo, sandwich meat, peppers, onion, lettuce, zucchini, eggplant.

Recipe
Ingredients
- Ciabatta, for serving
- 1 Avocado
- 1 tsp Extra Virgin Olive Oil
- 1/4 tsp Paprika
- 1/4 tsp Kosher Salt
- 1/4 tsp Pepper
- 1/8 tsp Cayenne, optional
- 1 Cucumber, thinly sliced
- 2 Roma Tomatoes, thinly sliced
- 8-10 Peas in a Pod
- Alfalfa Sprouts
Directions
- Toast bread.
- While bread is toasting, in a small bowl, mash one avocado with olive oil, paprika, kosher salt, pepper and cayenne.
- Spread the avocado mixture over each slice of bread.
- Layer cucumber, tomato, peas, and sprouts as desired.
