Ultra Moist Zucchini Bread

Today’s recipe is pretty basic, but I’m sharing it because of you don’t have a go to recipe for zucchini bread, this is it. If you like banana bread, this is even better. If you don’t like banana bread, zucchini is a perfect alternative because you get the soft, cakey texture, without the banana flavor.

I’ve made this recipe hundreds of times and it always comes out perfect. For this post, I baked it in the form of a cake. Originally, I had planned to post this as a snack cake, but when I started thinking about adding frosting, it just felt wrong. You can bake it in either form, bread or cake, it’s delicious no matter what.

Zucchini bread is probably one of my all time favorite things to make. It’s so moist and buttery with warm cinnamon and vanilla flavors. I always use a dark metal non-stick baking pan because it makes the slightly crispy top and edges.

The other reason I love zucchini bread is because it reminds me of my grandparents. I know y’all love to make memes about food bloggers telling ridiculously long stories when you’re just here for the recipe, but it’s a blog! Put up with me for one minute, or skip ahead, that’s cool too.

When I was a kid, my grandpa, retired farmer, would grow a vegetable garden every summer. It. was. beautiful. Potatoes, tomatoes, peppers, squash , etc. but my favorite was the zucchini. He had a love for growing giant vegetables. He figured out that when it comes to squash, if you cut off all the flowers except one, you’d end up with one massive squash. He grew the biggest zucchini you’d ever see. I wish I had a picture to show you. I mean they were the size of your average 5 year old. No joke! They were massive. My grandma would use them to make zucchini bread, one of grandpas favorites.

 Anyways, one summer my grandma got sick, more like, old age and hard work finally caught up to her. The point is, the end was coming. My mom and I would drive up mostly on the weekends and sometimes during the week to help out with things around the house, take care of my grandma, and make sure my grandpa got his three meals a day. I spent a lot of time baking, because it brings me comfort. One of the last days we were there, my grandpa came in with a big zucchini and asked me to make some bread. So I did. I made 15 loaves of zucchini bread with it, if that tells you anything about how big it was. We froze most of them. But when he took the first bite of the bread I had made, he chuckled and looked up at me and said “You bake just like Elaine.” To this day, that’s the greatest compliment I’ve ever received. Because if there’s one thing on this earth my grandpa loved more than anything, it’s my grandma and her cooking.

Uh… so anyways, the recipe.

Subsitutions and Add Ons

  • Brown Sugar can be switched for white sugar, which means you’ll just be using all white sugar for this recipe.
  • Zucchini can be substituted for carrot, or you can use half zucchini half carrot.
  • You can also add cream cheese frosting, nuts, raisins, or chocolate chips.

  • 1 C Packed Dark Brown Sugar
  • 1 C Granulated Sugar
  • 3 Large Eggs
  • 2/3 C Vegetable or Canola Oil
  • 2 C Zucchini, grated (about 1 medium zucchini)
  • 2 C All Purpose Flour
  • 2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 2 Tbsp Cinnamon
  • 2 Tbsp Vanilla Extract


  1. Preheat oven to 350°F and grease either a 9×9 cake pan or 2 loaf pans, I use the dark, non-stick kind for best results.
  2. In a medium mixing bowl, combine brown sugar, granulated sugar and eggs.
  3. Add vegetable oil and zucchini, mix until full combined.
  4. Add flour, baking soda, baking powder, cinnamon and vanilla, mix well.
  5. Pour batter into pans and bake 30-35 minutes or until tops and edges are dark brown and a toothpick or butterknife comes out of the center clean.
  6. Leave to cool for at least 20 minutes. Enjoy alone or with a shmear of butter.
